Recipe: Rainbow Spring Rolls

I'm sure you've heard people say that you need a variety of vegetables in your diet. Perhaps you've also heard the phrase, 'eat the rainbow' which describes the concept of getting phytonutrients and polyphenols by eating fruits and vegetables from each color of the rainbow. In this recipe, I embrace the 6 tastes and the rainbow all wrapped up in a wonderful finger food. This recipe is Ella-approved (her words), "Oh! I love these!" To make this recipe cleanse-friendly, omit Cheng Du Crunch, peppers, chicken/tofu, tamari and peanut sauce. For more flavor, use additional ginger, lime and ground mustard with the coconut aminos, sesame oil and rice vinegar.
